Snack / Appetizer
100g organic cooked beetroot
250g (canned) organic chickpeas
2 organic garlic cloves
2 tbsp Tahini
Juice of ½ lemon
~ 100ml organic olive oil
Salt & pepper, to taste
Cut the beetroot in small pieces and chop the garlic. Drain and wash the canned chickpeas and let them dry on a paper towel.
With a blender, mix together beetroot pieces, chickpeas, tahini and garlic. Drizzle in the lemon juice and a little olive oil as the hummus is mixing.
When you’ve reached the desired consistency, salt & pepper, to taste and adjust the seasoning if needed. If it’s too thick, you can add a little bit of water.
Serve with a piece of Finn Crisp, on toasted bread or with veggie sticks. Enjoy :)
