Vegan beetroot tartare with avocado mash

Ingredients
200g cooked organic beetroot
1 organic spring onion
½ organic red pepper
2 tbsp sesame seeds
2 tbsp rice vinegar
3 tbsp soy sauce
1 tsp ginger, freshly grated
1 tbsp sesame oil
1 tsp sweetener, I used rice syrup
Fresh organic herbs to garnish, I used mint
1 organic avocado
Juice of ½ organic lemon
Salt & pepper, to taste
For the mashed avocado
Directions
Chop the beetroot into very small pieces and place them in a bowl. Always be cautious when you work with beetroot, the red color easily leaves stains which are hard to wash out! Believe me, I know.. :)
Chop the spring onions and the pepper and add to the bowl. In a glass mix together rice vinegar, soy sauce, ginger, sesame oil and rice syrup. Try to adjust the taste, until satisfied. Add the dressing and sesame seeds to the bowl and let marinate for 10-15 minutes.
With a fork, mash the avocado until creamy. Add the lemon juice slowly, make sure to taste it.. so it doesn't get too sour. Salt & pepper, to taste.
On a plate place beetroot tartare and mashed avocado, top with black sesame seeds and herbs and enjoy with herby crackers or toasted bread. Voila & bon appetit!
