In Austria, where I'm from we love to eat dessert made with curd cheese (quark). This recipe is my result of trying to create a healthy version of my beloved curd dumplings, and it worked out! :) I hope you like them as much as I do.
Melt the butter in a small pot over low heat, and then let fully cool down. Meanwhile mix together quark, breadcrumbs, poppy seeds, butter, honey, lemon zest and two eggs as well as one egg yolk only.
Mix the ingredients together until you get a soft dough out of it. Wrap the dough in plastic foil and let it rest in the fridge for at least one hour.
Bring a pot with water with 1 tbsp of honey to simmer. In the meantime, divide the dough in X equal amounts and roll balls out of them.
Bring water to a boil, and add the dumplings. Immediately take the pot from heat, put a lid on and let it sit for around 6 to 8 minutes or until they float on top of water. Meanwhile roast the poppy seeds in a pan without oil and roll the dumplings in it to coat them.
