On sundays I love preparing something which will make me happy every single day of the coming week! These cookies will stay fresh for around 5 days in the fridge. But if they last that long I can't promise :)

2 organic bananas, the riper the better
120g organic oats
60g organic dark vegan chocolate

Directions

Preheat the oven to 180°C. Peel the bananas and break them up into small pieces. In a mixing bowl mash them with a fork. Add the oats to the bowl and set aside to allow the oats to get moist. Meanwhile, chop the chocolate into small pieces.
Add the chocolate chips to the bowl and stir. With a tablespoon, scoop the batter and form cookies (they will stay in the same shape you form them) and place them on a parchment paper.
Bake for 10-12 minutes. Let them cool before you enjoy them with fresh fruits or yogurt :-)
