Mixed salad with halloumi, tomato & avocado

Ingredients
1 organic avocado
1 organic lettuce
200g organic tomatoes
2 tbsp mixed nuts
2 tbsp seeds, I used sunflower seeds
200g organic halloumi
2 organic spring onions
Fresh herbs, I used chives
4 tbsp olive oil
Juice of ½ organic lemon
2 tbsp balsamic vinegar
1 tbsp mustard, I used dijon
2 tbsp organic honey
Salt & Pepper, to taste
For the dressing
Directions
Wash your lettuce, tomatoes and spring onions and herbs and let them dry on a paper towel. If you have a salad spinner, use it so you get your salad crunchy and dry and the dressing will hold better to it.
Cut your avocado into bite sized pieces, half the tomatoes and chop the nuts, spring onions and herbs.Mix all the ingredients for the dressing in a glass and stir, until well combined.
Drain the halloumi and cut into~1cm thick slices. Bring (cast iron) pan to high heat and grill the halloumi for about 2-3 minutes on each side until browned. Take out and cut into smaller pieces.
In a bowl mix the vegetables with the salad and the dressing and give everything a good stir.
Serve your salad on a plate and top with the halloumi pieces, seeds and nuts. Enjoy :)
