Grilled salmon & spinach salad

Ingredients
400g organic salmon filet
300g organic spinach
2 organic spring onions
40g organic sesame seeds
1 tbsp organic vegetable oil
2 tbsp tahini
1 tbsp sweetener of choice, I used rice syrup
3 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp mayonnaise, I used the Japanese kind
For the dressing
Directions
Wash and dry the spinach. Chop the spring onions. In a glass mix together all the ingredients for the dressing, stir with a fork until everything is well combined.
Generously season the salmon fillets with salt and pepper. Bring a pan to high heat and add the veggie oil. Add the salmon fillets to the pan, skin-side-down, and fry for 3 mins until crisp. Flip the fillets over, lower the heat and cook for 2 more minutes.
Toss the spinach with the dressing and the spring onions and mix.
On a plate serve the spinach salad, top with the salmon filet and garnish with sesame seeds. Enjoy :)
