Definitely will give you those summer feels

Ingredients
½ bunch organic mixed greens
70g organic prosciutto, thinly sliced
2-3 organic peaches
250g organic buffalo mozzarella cheese
½ bunch organic mint
1 tbsp organic sweet balsamic
4 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp sweetener, I used rice syrup
1 tsp dijon mustard
Juice of ¼ organic lemon
Salt & pepper, to taste
For the dressing
Directions
Wash the salad and dry it with a salad spinner.Rinse peaches and herbs gently and dry them on a paper towel. Cut the peaches into quarters and tear up the mint leaves.
Mix together all the ingredients for the dressing until fully combined. Salt & pepper, to taste and set aside.
Mix salad and the dressing. Rip the mozzarella into pieces and together with the peach quarters serve on a plate. Top with the sliced prosciutto. Garnish with fresh mint and a little bit of organic olive oil & sweet balsamic! enjoy :)
