Asian quinoa salad

Ingredients
150g organic Quinoa
½ organic avocado
1 organic red pepper
1 organic mango
200g organic tomatoes
1 bunch fresh herbs, I used mint and coriander
2 tbsp organic peanuts
2 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp rice syrup
1 tbsp soy sauce
For the dressing
Directions
Cook the quinoa as instructed. Ideally one hour in advance, so it has enough time to cool down. I sometimes cook more and store it in the fridge so I have it at hand when I need it.
Wash the veggies and cut pepper, mango, tomatoes into bite sized pieces. Chop the herbs.
Mix all the ingredients for the dressing together, taste and adjust until satisfied and set aside. Roast the peanuts in a pan without oil.
Mix everything together in a salad bowl and toss well. Top with some of the roasted peanuts and enjoy! :)
