Spinach & Mozzarella bake

One of my go - to dishes! It’s quick, nutritious and tastes like a sin - but it isn’t one. :)
500g fresh organic spinach
1 organic mozzarella
2 organic eggs
1 organic onion
2 organic garlic cloves
20g organic pine nuts
1 tbsp dried organic oregano
Salt & pepper, to taste
Preheat the oven to 180°C. Cut off thick stems and wash the spinach with water. Dry the spinach in a towel or a salad spinner. Tear apart the mozzarella in layers, and let the pieces dry on a paper towel. Finely chop the onions & garlic.
In a medium size pan, heat 2 tbsp of olive oil over medium heat and add the onion. Cook, stirring often, until tender. Then add garlic and sauté until garlic is beginning to brown, about 1 minute.
Add the spinach, a handful at a time and stir until each handful wilts. Add the pine nuts and salt & pepper, to taste and give it a good stir.
Place the mixture into an an oven dish and use two forks to make a whole in the center, crack the egg directly into it. Cover the spinach with mozzarella and add a little bit of salt.
Place in the oven and bake for about 10 minutes or until the mozzarella is fully melted. Enjoy while it's still hot :)
