One pot white fish

Ingredients
250g organic cod
2 organic spring onions
700g fresh organic veggies, I used red pepper and zucchini
¼ bunch of fresh herbs, I used parsley and oregano
2 tbsp organic olive oil
3 tbsp veggie broth powder
½ organic lemon juice
200 ml water
Salt & pepper, to taste
Directions
Cut the veggies into bite sized pieces. If you use shallots or classic onions, chop them finely. Cut your fish filets in half and salt & pepper, to taste
Bring a medium sized pot to high heat and add the olive oil. Add the onion and sauté until soft. Deglaze with the veggie broth and water and add the other veggies for another 3 minutes.
Add your fish filets to the pot and top with the herbs. Put the lit on it and let everything steam for 10-15 minutes or until cooked through.
On a plate serve your veggies and fish on top, squeeze lemon over it and garnish with fresh herbs! Enjoy!
