Lettuce wraps with spicy chicken

Ingredients
Leaves of 1 organic lettuce
3 tbsp organic gratin cheese, grated
150g organic mushrooms, I used shiitake
250g organic chicken breast
1 tbsp curry powder
1 tbsp spicy pepper powder
1 tbsp sweet pepper powder
1 tbsp sesame seeds
1 tbsp honey
Some veggie oil
Juice of 2 organic limes
100g organic tomatoes
1 organic red pepper
A little bit of mint leaves
Salt & pepper, to taste
1 organic avocado
Chicken marinade
For the guacomole
Directions
Chop the avocado, tomatoes, peppers, mint and lime juice and mix all the ingredients in a bowl, salt & pepper, to taste. Cut the mushrooms into ~1cm thick slices. Cut the chicken into bite sized pieces.
For the marinade mix together the powders with the sesame seeds. Add the honey and a splash of warm water until everything is well combined. You are looking for a pourable consistency here.
Bring a pan with 1 tbsp of oil to high heat and add the mushrooms. Sauté until golden, salt & pepper, to taste and set aside. In the same pan, heat some oil and fry your protein until golden brown. Add the marinade to the pan and cook until it sticks to the protein.
On a plate assemble your lettuce wraps, fill with guacamole, mushrooms, cheese and chicken. Garnish with fresh herbs and roasted sesame seeds. To make it extra filling, add some brown rice. :)
