Every time I go to greece I have to order Gigantes Plaki! Beans with tomatoes and fresh herbs! I love it - so healthy, filling and delicious! I hope you like my "easy version" :)
Lunch / Dinner
1 organic onion
2 organic garlic cloves
1 tbsp fresh oregano
1 can organic white beans
1 can organic tomatoes, diced
1 tbsp tomato paste
1 tbsp honey
100ml organic veggie broth
4 tbsp organic olive oil
2 tbsp ajvar or 1 tbsp paprika powder
2 Bay Leafs
Salt & pepper, to taste
Preheat the oven to 220°C. Chop the onion and garlic into small pieces. Strain and wash the beans and set aside.
Heat a pot over medium heat and add the olive oil, sauté the onions for around 4 minutes then add the garlic until softened.
Add the honey and the tomato paste to the pot and stir. After 1-2 minutes add the bay leaves, oregano and the beans. Deglaze with canned tomatoes and broth, and if desired, add ajvar or paprika powder to the pot and stir until everything is combined. Salt & pepper, to taste. Over medium heat let simmer for 3-5 minutes.
Fill everything into a heat resistant baking pan and bake for 20-25 minutes.Garnish with fresh herbs and enjoy! :)
