Asian beef salad with fresh herbs
Lunch / Dinner
200g organic beef filet
1-2 organic cucumbers
2 organic spring onions
1 tbsp rice vinegar
Juice of 1 organic lime
1 tbsp sweetener, I used rice syrup
1 tbsp soy sauce
1 organic red chili, or dried chili
1/2 bunch of fresh herbs, I used mint and cilantro
Salt & Pepper, to taste
For the dressing
Preheat the oven to 140°C. Salt & pepper the steak, to taste and sprinkle with some oil. Bring a (cast iron) pan to high heat and sear the steak (first on the sides) until well browned. Repeat on every other side.
Place the beef on a sheet of aluminium foil and sprinkle with sesame oil. Put in the oven for around 25 minutes.
In the meantime, finely chop chili, shallots and the herbs. Cut spring onions into ~1cm pieces. With a sharp knife slice the cucumber into thin slices.
In a bowl mix all the ingredients for the dressing and stir until fully combined. Add the beef, shallots, spring onions and herbs.
Layer a plate with the cucumber slices first and put the salad on it. Garnish with fresh herbs and pepper :)
