Those cute, yummy and super filling mini frittatas are not only for breakfast! Enjoy them whenever you feel like it, you can switch the veggies/filling as you desire
4-5 organic eggs
150g organic cherry tomatoes
2 organic spring onions
100g organic feta cheese
2 tbsp (plant) milk
1-2 tbsp organic olive oil
Salt & pepper, to taste
Preheat the oven to 180°C. Chop the spring onions into thin pieces. Cut the cherry tomatoes into halves and crumble the feta.
Bring a pan to medium heat. Add olive oil and spring onions. Meanwhile whisk together the eggs and milk until well blended. Salt and pepper, to taste. After 2-3 minutes, add the butter and the tomatoes to the pan and sauté for another 5 minutes, stirring occasionally. Add the spinach, salt & pepper, to taste and immediately take the pan from heat.
Mix the egg mixture with crumbled feta and fill in your muffin form. Put in the oven for about 17-20 minutes or until the eggs are cooked through.
Enjoy with a fresh green salad or on a whole wheat toast :)
