A special and colorful version of hummus. The best thing about this recipe is, you don't need a food processor! :) And the color is just beautiful, perfect to prepare for a brunch with your friends! Enjoy!
Cut the beetroot in small pieces and chop the garlic. Drain and wash the canned chickpeas and let them dry on a paper towel.
With a blender, mix together beetroot pieces, chickpeas, tahini and garlic. Drizzle in the lemon juice and a little olive oil as the hummus is mixing.
When you’ve reached the desired consistency, salt & pepper, to taste and adjust the seasoning if needed. If it’s too thick, you can add a little bit of water.
Serve with a piece of Finn Crisp, on toasted bread or with veggie sticks. Enjoy :)
